The wellDone Sauvignon Blanc byHeinrich, through careful winemaking and aging, becomes a single varietal Sauvignon Blanc with a fine balance of acidity, a touch of the exotic and hints of passion fruit.
The grapes for the wellDone Sauvignon Blanc are harvested by hand at the optimal time of ripeness. This ensures that the grapes can develop their full flavor and aroma potential.
The fermentation of the juice takes place at controlled temperatures between 12 and 15 degrees Celsius in stainless steel tanks to preserve the aromas and acidity of the wine. A selected pure yeast is used to ensure optimal fermentation of the must. After fermentation, part of the wine was aged in barrique wooden barrels and part in stainless steel tanks for several months, each on the fine lees. Here an oxidative maturation takes place, during which the wine develops its pleasant complexity and depth. Finally, the wine was then bottled and stored in the cellar for another few months to achieve optimal maturity.
